Best Berry Muffins
Combine:
       2 C Flour
       1/2 C Sugar
       4 tsp Baking Powder
       2 Tbsp Butter
       1 C Milk
       1 C (or more!) Berries

Variations: -Use Blue Berries, Raspberries, Cranberries or any Kind of Berries, Add some Orange Juice or Rind for Cranberry Orange Muffins or Walnuts for Crunch!

Bake 400F 20-30 min. Enjoy!

Mom's Oatmeal Molasses Bread (makes 2 loaves)

2 C Rolled Oats
3 C Boiling Water
1 tsp Salt
1 C Dark Molasses
2 Yeast Cakes Dissolved in 1/2C Warm Water
8C Flour

Pour boiling Water over Oatmeal & let stand 1 hr or so until just warm. Add Salt, Molasses & Yeast. Then Add Flour. Let rise until double in size, knead. Put in greased pans & let rise again. Bake at 350F for 50 Min.

Favorite Chocolate Chip Oat Bars

1/2 C Butter
1 C Brown Sugar
1 Egg
Grated Rind of 1 Lemon or Orange
1 tsp Vanilla
1 1/2 C Rolled Oats
1/4 tsp Salt
7 oz Chocolate Chips

Cream together butter & sugar. Beat in egg, orange or lemon rind, vanilla, rolled oats and salt. Add chocolate chips. Bake at 375F for 30 Min in greased & floured pan.

Apple Cranberry Muffins

2 C Flour
1/2 C Brown Sugar
4 tsp Baking Powder
2 TBSP Butter
1 C Milk
1 Cup (or more!) Dried Cranberries & Chopped Apples
Dash of Cinnamon

Bake 400F  20-30 Min. Enjoy!

Tips: Use Blue Berries, Raspberries. Add some oats if you like. Add Orange Juice or extract for Cranberry Orange Muffins, or Walnuts for Crunch. In our family we like to bake these in cast iron pans for extra crispness!

Irish Soda Bread (Origin unknown, an old clipping my mother had)

2 1/2 C Flour
2 tsp Baking Powder
1 tsp Salt
1/2 tsp Baking Soda
1/4 C Margarine
1/2 C Sugar
1 Egg
1/12 C Buttermilk
1C Raisins
1/2 C Currants
1 TBSP Caraway Seeds

Sift Dry Ingredients. Cream Butter & Sugar. Add Beaten Egg & Buttermilk. Add to dry ingredients & mix until moist. Add Raisins, Currants & Caraway Seeds. Pour into Greased Pan. Brush with Butter & sprinkle with Sugar. Bake 375F for 30 min, then 325F for 30 min. Good hot & fresh or toasted.

Cranberry Orange Muffin Recipe

2 1/2 C Flour
1/2 C Sugar
4 tsp Baking Powder
2 TBSP Butter
1 C Milk
1 Cup (or more!) Cranberries
Juice & Zest of 1 orange

Bake 400F for 20-30 Min. Enjoy!

Tips: Use Blue Berries, Raspberries, Cranberries. Add Walnuts or Pecans for Crunch. In our family, we like to bake these in cast iron pans for extra crispness!

Awesome Baked Hot Oatmeal with Apricots & Pecans

Mix together:
1 1/2 Cups Rolled Oats
1/2 C Chopped Pecans
1/2 C Chopped Dried Apricots
1/4 tsp Salt
1 tsp Cinnamon
1/3 C Brown Sugar
1 Egg
1 1/3 C Milk
2 TBSP Melted Butter

Pour into greased 9 x 9 pan & bake at 350F for 30-35 min. Good hot from the oven for breakfast, or at room temp as an afternoon snack, serve with ice cream as a dessert! Also good with cranberries or other dried fruit. I like pecans, but walnuts, or no nuts, is delish!

Cream Cheese Cookies

1 Sm Pkg Cream Cheese
1/2 lb Butter
1 C Sugar
2 C Flour
1 tsp Salt
3 tsp Vanilla

Cream Butter, Cheese & Sugar.  Add Flour, Salt & Vanilla.  Roll in wax paper & Chill.  Slice Thin.  Bake 325F for 11 min.

Variations: Stir in Finely Chopped Pistachios, Pecans, Walnuts, Orange Zest or Dried Cranberries!

Vegetarian Baked Beans

4C Beans (Jacob's Cattle Beans are good)
2 1/2 C Hot Water
1 Onion
1/2 C Molasses
1 C Butter
1tsp Salt
2 tsp Dry Mustard
1/2 C Tomato Catsup

Soak beans 24 hrs.  Drain & cook until tender, about 30 min.  Drain Beans & save liquid.  Put Onion in bottom of a pot.   Pour Beans into bean pot pot over onion.  Add Molasses, Butter, Salet, Mustard & Catsup to saved bean liquid & pour over Beans.  Cover & cook in slow oven.  Add water when necessary.  Remove cover last 1/2 hr & brown.
